About this one
In Hunza, mulberry season is not harvested so much as collected. A cloth is spread beneath the tree, someone climbs up and shakes a branch, and the fruit rains down. What lands is dried in the sun until it is light enough to rustle.
White mulberries are not sharp like berries usually are. They taste of caramel and honey with a faint vanilla note, and they are sweet enough that people who eat them for the first time assume sugar was added. Nothing was.
This is the traditional pocket food of the valley — walked with, worked with, and handed to guests before the tea arrives.
How to use it
- Straight from the bag as a natural sweet.
- Stir into morning porridge or overnight oats — they soften and sweeten it without sugar.
- Blend into smoothies as the only sweetener.
- Mix with walnuts and desi almonds for a proper mountain trail mix.
Keeping it
Airtight jar, cool and dark. 12 months. Keep dry — they absorb moisture from humid air and go chewy.
