Why it's different
Size in almonds is a function of water and fertiliser. Flavour is a function of time. These trees got time.
Many are decades old and were never part of a commercial planting scheme.
Skins on, nothing roasted, nothing salted, no oil. Blanching strips flavour along with the skin.
Desi almonds are noticeably smaller than the Californian almonds sold everywhere — often half the size, irregular, some of them a little crooked. They look, frankly, like they were not graded. They were not.
What they have instead is flavour. These trees are old, often wild-rooted, unirrigated and unforced. A small almond that took a whole season to fill tastes more of almond than a large one that was pushed.
Snap one in half. It should be dense and slightly oily, and the taste should keep going after you swallow.
Airtight, cool, dark. 9 months, or a year in the freezer.
