The colour is oxidation, exactly what a cut apple does on a plate. Pale dried apple has been chemically prevented from doing it.

About this one
Local apple varieties, sliced thin and laid out on the same rooftops the apricots use, a few weeks later in the year. They dry to a soft-leathery chew rather than a crisp — no oven, no dehydrator, no fan.
Because they are not treated with sulphur they turn a warm tan-brown as they dry. Supermarket dried apple rings stay pale cream because they have been gassed to stay that way.
The flavour is plain, honest apple with a slight toffee note from the sun. Children tend to eat the whole bag.
How to use it
- A lunchbox snack that survives being sat on.
- Simmer in milk with cinnamon for a soft, warm breakfast.
- Chop into granola or a baked crumble topping.
- Steep two or three rings in hot water for a mild apple tea.
Keeping it
Airtight, cool, dark. 10 months. If they stiffen up, a few minutes in warm water brings them back.
