Why it's different
Apricots, sugar, lemon juice. That is the whole ingredients list, and it is on the front of the jar.
Long, slow cooking concentrates the fruit's own pectin. Added pectin lets a producer use less fruit and less time.
The Halman variety, from the same orchards. Nothing second-grade goes in the pan.
The same Halman apricots we dry, caught at peak ripeness in August and cooked down with sugar and a little lemon juice. That is the entire recipe.
It is cooked slowly and for a long time, which is the only way to get a set without adding pectin. The colour comes out deep amber, and there are real pieces of fruit in it because it is not blitzed smooth.
It tastes like the fruit did on the tree, which is a low bar that most commercial jam does not clear.
Cool, dark cupboard until opened. Refrigerate after opening and use within 4 weeks.
